This pineapple mint lemonade is so refreshing in this summer heat and is the perfect balance of sweet, tangy, and citrusy. If you want a twist to your lemonade this summer, this recipe is the way to go!

Tips to keep it fresh longer:
Store without ice to avoid dilution.
Keep the garnishes separate and only add them when serving.
Using the mint syrup will help preserve the flavor a bit better than adding fresh mint directly.

Mint Pineapple Lemonade (Dominican-Inspired Twist)
Makes about 4-6 servings
Ingredients:
• 7 lemons (you’ll need about 1 cup fresh lemon juice)
• 2 cups pineapple juice (fresh or canned)
• 1/2 cup sugar (adjust to taste)
• 4–5 cups cold water (depending on how strong/tart you like it)
• 1/2 cup fresh mint leaves (plus extra for garnish)
• Ice
• Optional: Pineapple wedges + lemon slices for serving

Instructions:
1. Juice the lemons:
Roll them first to get more juice out, then squeeze until you have about 1 cup of lemon juice. Strain to remove seeds and pulp if you want it smooth.
2. Make the mint syrup (optional but extra flavorful):
In a small saucepan, combine 1/2 cup sugar, 1/2 cup water, and the mint leaves. Heat just until sugar dissolves, then remove from heat. Let it steep for 10–15 minutes, then strain and discard mint.
3. Combine everything:
In a large pitcher, add lemon juice, pineapple juice, mint syrup (or just sugar if skipping syrup), and 4 cups cold water. Stir well and taste — add more sugar or water if needed.
4. Serve:
Pour over ice, garnish with mint leaves, lemon slices, or a pineapple wedge for that tropical summer vibe.
